So Excited!

It's that time again! I get to go to Indy this weekend and work at Interactive Intelligence's user conference. Wohoo! Getting paid to have tons of fun is the best! It really doesn't seem like work even though it's 12 hour days of definitely working hard. I love pretending i'm a business woman for the week. I am so excited to get to be with my Dad and see him do his thang!

Then of course I get to stay a couple days in Indy to help my sis and her cute fam move in to their new house! (My bro in law is doing his residency in Indiana- Congrats to him for graduating from medical school tomorrow! So exciting!) I'm really sad they're moving from AZ but so excited for them at the same time. I have a feeling they're going to love it in Indiana. They'll love it anywhere they go cause they're just awesome.  I can't wait to spend lots of time with my sweet niecies, sister, and bro in law!

Remember How Good It Is

Remember how we sometimes get caught up in negative little things and it makes us think that our life is ridiculously stressful and not the best? Well no, life isn't always the best, and it's dang stressful, but remember how good it is? Remember how when we focus on the small positive things in life then we remember how dang good life is? I remember.

Some little things that help make my life oh so good right now


It's summer! I get to go work with my dad in Indiana in a couple weeks. I get to stay in Indiana and play with my niecies! I get to help my sis and her fam move into their new house there. I have a body that works and I can work it out along side my {crazy-work-out-three-times-a-day} roommates. I have the best family I could ever ever ever ask for including the most supportive parents that truly are the most incredible people I have ever met. {Seriously how did I get so blessed to be sent to them?} I have two jobs this summer and coming home from a long/hard day of honest work is one of the most rewarding feelings in the world {i love it}. The pool. The weather is beautiful. The mountains are in my backyard. I am at the age of freeness. I can do ANYTHING with my life! That is such an amazing feeling...I have so much I want to do, {a bucket list you could say} and preping for one of those things makes me realize just how much I want to do in the next few years. I have flexible purpose right now and it is refreshing to think of.

Last Weekend

Since it is almost this weekend, I might as well share some pictures from what I did last weekend..
I got to spend time with the fam which was just so fun! {as always} Being with my family is my favorite thing in the world. {I love you family!}

is that an "r" and an "n" or just an "m"?

Sometime those "Please prove you're not a robot" scrambled "words" you have to type in to post a comment or whatever on the internet are too hard. Takes away precious blog stalking time. 

any who..

You know those friends you meet in classes that are strictly your class buddies? You know, you see them only in class, sit by them every time, and sometimes you don't even know their name..(unless you've added them on facebook, which sometimes happens). Those class buddies that are special to you because you bond through projects, tests, critiquing the professor, and talking about that person involved in your group project who "does nothing". They are the ones who make class more enjoyable. Man, I love those class buddies. And remember how when the semester ends you never see them again? It makes me sad to see my class buddies go. I hope I get to see them all in heaven, because I've really liked them all. 

So connor, good luck on your mission and Austin too. To my English 1010 class buddy years ago, I hope your wife forgave you for how cool you told her I was. And my kind of class buddy in my sociology class that burped really loud every day, I really enjoyed you. (I more so just wish he would've been my class buddy) And the blonde boy who was in my connections class and was my first kiss at USU you were really weird and attractive and fun to be with. {I guess he was a little more than just a class buddy} And to my FCHD 2610 class buddy, good luck with your new baby.

I finished my last final for the semester today (WAHOO) and to celebrate I am working my third shift of the day.

Utah State has a new logo and I really like it. Oh how I love USU and being an Aggie!

Shredded Beef Tacos and Finals

Shredded Beef Tacos


These are the yummiest things you will ever eat! My roommate made them last night for her and her fiance and they let me bum off of them...seriously they were DELICIOUS! And supposedly really easy! {Recipe is from here.}





1 (2.5 lb) chuck roast
1 (14 oz) can beef broth
1 1/2 Tbsp chili powder
1/2 Tbsp cumin
1/2 Tbsp onion powder
1 tsp garlic powder
1 tsp salt
1/4 tsp freshly cracked black pepper
Juice of 1 lime


Serve with:
Warmed corn tortillas or warmed fresh flour tortillas*
Green or Iceburg lettuce, chopped
Monterrey Jack or Cheddar cheese, shredded
Guacamole or diced avocados
Sour cream
Fresh salsa
Cilantro
Freshly squeezed lime juice
Hot sauce


Directions:
In a small bowl whisk together chili powder, cumin, onion powder, garlic powder, salt and pepper.  Place roast in a slow cooker, pour beef broth over roast then squeeze with fresh lime juice.  Sprinkle roast with spice mixture.  Cover slow cooker with lid and cook on low heat 8-10 hours.  Remove roast from slow cooker, shred beef (remove fat) and return shredded beef to slow cooker.  Cover with lid and cook additional 30 minutes.  Remove beef from slow cooker with tongs to remove juices when plating or drain in a colander.  Serve with desired toppings.  

I use two different kinds of tortillas when I make these tacos.  Most of the time I use corn tortillas but I also love these tacos using fresh flour tortillas.  For the corn tortillas, I heat a griddle over medium high heat then I make a mixture of a few tablespoons extra virgin olive oil and a few tablespoons vegetable oil, then I baste the oil mixture on the tortilla and cook each side until golden on each side.  Then move tortilla to a plate lined with a paper towels to soak up extra oil.
